So, as you may remember, we had some problems with the Beef Taquitos a while back. But I still had 3 gallon sized bags of them in the freezer. I needed to do something with them. I figured out a great solution. Enchiladas.
Preheat oven to 350 degrees F. Take a 9″x13″ baking dish and fill with as many Beef Taquitos as you can fit in there (still frozen). Pour one can (jar, about 15-20 oz.) enchilada sauce over them. Sprinkle 2-3 cups of shredded cheese on top of the sauce (depending on how much your family likes cheese – mine likes cheese with their cheese!). Bake uncovered for 40 minutes, until bubbly. If the cheese is a little browned, it’s okay. Black is bad. *grins* Let cool for 5-10 minutes.
I also mixed up some guacamole, some Easy Spanish Rice (it may have been easy, but the recipe was a little hard to use), and a quick green salad.
