Really yummy dinner last night, very Asian American (you know, tastes like great Asian food, but perfectly fine to eat with a fork). *grins* It started with this recipe for Asian Pork Loin – which, by the way, took an hour, not 25 minutes in the oven, but tasted so good, I forgive the author. I snagged a couple of servings before it went to the table for Fried Rice later this week, and also made up another bag with the other 2 pounds of pork loin I bought this past weekend and a batch of marinade for the freezer. Cost per serving: $0.85, including the bed of plain rice.
Then to go with it, I made this really excellent tasting salad. I got the last of some iceberg from last week and 4 big leaves of fresh romaine and chopped those for the base. Then I added one chopped tomato, a handful of peanuts, a handful of chow mein noodles (the kind you eat dry and crunchy), and about 1/4 c. of my favorite Asian salad dressing. Cost per serving: $0.35
Total Cost per serving: $1.20
Into the freezer went: 2# Asian Pork
