Speckled Egg Salad

And after the egg hunt is over, it’s time for Speckled Egg Salad Sandwiches!

4 servings, 10 minutes

4-6 hardboiled eggs, coloring entirely optional but fun
1 rib celery, finely diced
1 T. mayonnaise
1 T. Dijon mustard
1/2 t. salt
1/2 t. pepper
1/2 t. garlic powder
1/2 t. dill

1. Chop egg as finely as you can. Combine with celery, mayo, mustard, salt, pepper, garlic powder, and dill. Taste and adjust seasonings if necessary.

2. Spread on whole wheat toast for sandwiches, or on whole grain crackers, or with celery for dipping.

    1. Thanks, I like them, too. šŸ™‚ Blech. I like my pickles whole and kosher (heavy on the garlic), not chopped up and lost in my egg salad (or tuna salad) (or any other salad). But I love dill. šŸ™‚
