Feed the Freezer for Grilling


Iiiiiiiiit’s DUMP RECIPE tiiiiiiiime!

Um, yeah.  Sorry about that.  Every person who does OAMC loves dump recipes.  I think we all just wish there was a better name for them. 😉  If you are thinking these are going to be disgusting, the concept is that you “dump” everything in a freezer bag and freeze.  Then thaw and cook!  It’s a way to have lovely marinated meat without doing any cooking on your freezing day.

And it is the BEST way to feed your freezer from grilling!  1 hour of work now means you have a dozen grilled meals waiting for a sunny day.  Chicken will work in just about ANY dump recipe, but I am including some other meats to show you that you don’t have to just stick with grilled chicken.  This one is mostly for the carnivores, but I promise a menu for the vegetarians is coming. Now, the recipes!

Scout’s Moroccan Chicken
1/2 T. olive oil
1/2 T. cumin
1/2 T. turmeric
1/2 T. paprika
1/2 T. coriander
1/2 T. garlic salt
1/2 T. red pepper flakes
1 lb. chicken, cut into 1-inch cubes (breasts or thighs)

Teriyaki Shrimp
3 T. soy sauce
2 T. mirin
1 T. sesame oil
1 pound medium shrimp

Mustard Barbecue Pork
2 T. barbecue sauce
2 T. mustard
2 T. cider vinegar
1 T. salt
1 pound boneless pork chops

TO ASSEMBLE (ALL): Measure everything but the meat into a labeled gallon sized freezer bag. Squoosh to mix. Cut meat if necessary, and then add meat to the bag. Squoosh so that meat to covered by sauce. Seal, and freeze flat.

TO SERVE (ALL): Thaw. All can be cooked in an oven or pan on the stove top. The chicken and pork can also be cooked in a crockpot on low for 6 hours. To grill (and that IS why we are here, right?), thread chicken and shrimp onto skewers and grill over medium high flame until chicken is well done, or shrimp is pink and curled. Chicken will take about 10 minutes, shrimp about 5. For pork chops, grill over medium high flame about 10 minutes per side (turning 90 degrees halfway through if you want the pretty grill marks), until the meat is medium well.
