I love muffins. I love the versatility of the form, and I love the freezability. I love the fact that I have a recipe for for a “Universal Muffin Mix” (It doesn’t make the best muffins, but it is good enough, frugal, and has 20+ variations). I love making regular muffins, and I love making mini muffins. I even loved making a muffin recipe in 9″x13″ baking pans that came out perfectly!
This is my latest batch of muffins to go in the freezer: carrot spiced muffins, with raisins. Not too sweet, not too carroty, but I can’t wait to try them with a schmear of cream cheese. Using the same basic recipe, I have cherry muffins, lemon muffins, and applesauce oatmeal muffins in the freezer for quick breakfasts and snacks.
