Breakfast: Slow Cooker Oatmeal $1.85
Yum. Seriously love this recipe. I’m not sure it was worth the $21 I spent on Relish!, but it is good. I bought walnuts, and that’s pretty much it for this recipe. You know what it looks like. 🙂
Lunch: Leftovers $0
The fridge was packed with a little bit of this, a little bit of that, not enough of anything for a full meal, and it was all kind of brown “meat in sauce” looking stuff which is not very appetizing if you don’t know what it is. So, this morning, some of it got tossed down the disposal and a lot of it got packed in lunchboxes with a green salad to freshen it up (the salad was actually leftovers, too!).
Dinner: Pinto Beans, Hoe Cakes, and Sauteed Onions $1.50
So, I pulled a bunch of pintos from the freezer, added a bit of butter, 2 cups of water (because they were cooked to my liking before going in the freezer), a chicken bouillon cube, and a LOT of adobo seasoning (probably a full tablespoon). Boiled it hard the entire time I cooked the rest of dinner, and it was AWESOME! then I started caramelizing onions in a bit of butter with salt, slow and low to bring out all of the natural sugars. Finally I mixed up and fried the hoe cakes (Maggie’s recipe, modified to make them a bit lighter with flour and baking powder).
Okay, so dinner was very brown. Not very colorful at all, but omigosh it was soooooo good. And actually less than 500 calories total. Tomorrow will be filled with colorful veggies, green and orange and red.
