Tuesday, the day before the trip


Made a couple of batches of muffins for breakfast. This is the second batch, mandarin orange made from a ca of segments that has been languishing in the pantry for months. I could have used the oranges from the box, but cutting supremes is not something I can do before I am fully caffeinated in the morning. 😉

I also made a batch of pear muffins that benefitted from a bit of oatmeal in the mix. I have a master muffin mix recipe I use that I can choose to add oatmeal or not. Some flavors are good with oatmeal (apples, pears, raisins, etc.), while other really aren’t to me (mandarin, lemon, gingerbread, etc.).
