Look at that beautiful omelet!! Believe it or not, that is the exact same recipe, cooked pretty much the same way, but with a brand new super slick nonstick pan. 🙂 the only thing I did differently was actually finish cooking it like an omelette instead of trying to figure  out what to do with that sticking mess I had earlier this week.   

Mmmmmm, look at all those veggies! Lentil and brown rice tacos (actually, my kids’ favorite kinds of tacos), topped with lettuce, tomato, and guacamole (made with fresh cilantro); with taco pickles, spiced cucumber, and mashed sweet potatoes. 

Out for dinner. More Mexican. Considerably less healthy. 

Out of the box:

  • Beets (all gone, roasted, purĂ©ed, and frozen for when I need them)
  • Cilantro
  • Cucumber
