Tuesday, trying to be good

Yesterday, I had fajitas for lunch (with lots of chips) and crawfish for dinner (with lots of bread to soak up the juice). Today, I’m trying to be good.  

 The kids had modified Buddha bowls.  

 I had a healthier version of fajitas with a yummy dose of avocado. Both lunches featured tasty veggies from the box.  

 Dinner was chicken with a barley and beet salad. Quite tasty, actually, and it uses the Swiss chard I got, too. 

Out of the box:

  • Cabbage
  • Sweet potato (last week, all gone!)
  • Spinach
  • Bell pepper
  • Golden beets (all gone!)
  • Swiss chard (all gone!)
