Monday, goodbye greens

Breakfast and lunch was pulled from the freezer, but dinner is my new favorite way of eating greens: 

 Mmmmmmmmm, creamed. This time, it was collards, kale, and mustard greens. I know it was done right when my daughter asks longingly if she can finish up the rest – right out of the baking dish! I told her she had to put into her plate, but she did scrape the dish pretty darn clean. Served with fresh butter beans cooked all day long with some chicken sausage over rice. A very delicious, very Southern kind of a dinner. 🙂

Out of the box:

  • Collards (all gone!)
  • Kale (all gone!)
  • Mustard greens (all gone!)
  • Butter beans (all gone!)

Tuesday, Spring Break

 Cleaning day. Start it right with a kale and berry smoothie. But put almond milk on the grocery list because smoothies made with water kinda suck. 

 WAO red bean chili made with a can of chili I had in the pantry, Nacho “cheese” (velveeta) leftover from a Girl Scout meeting, and fresh guacamole, served over rice. Yum! 

 Okay, this is actually one of my favorite recipes from Wildly Affordable Organic: Magic Quiche with Asparagus. What’s even better is that I didn’t have to make it. DH and DD made it together. It’s a whole foods version of the same type of recipe which usually uses Bisquick or some other packaged product. Add a half a baked potato (mine loaded with a little butter and a lot of seasoning), and some steamed broccoli (which had already managed to disappear by the time this photo was taken), and you have a very god dinner. And extra yummy leftovers.

Thursday, eat your greens

  Fried egg on pita with fruit salad. Nom.

  Lunch for hubby and the kids: Indian flavored chicken salad pitas, turmeric carrots, and cumin zucchini.  

  Giganto pile of greens. All three bunches of kale, plus the rainbow chard.  
 Wilted down, with a bechamel and Parmesan and broiled. Creamed kale, so yummy that my kids saw it, high-fived and asked if seconds were available before they took their first bite.  

 With chicken sausage and the last of the corn cake.

  • Kale (all gone!)
  • Laccinato kale (all gone!)
  • Purple kale (all gone!)
  • Rainbow chard (all gone!)

Wednesday, Kale day

  Starting off with a big cup of kale and blueberries.   
Continuing with creamed kale, sweet potato, and a roasted beet, arugula, and goat cheese sandwich.  Love the kale. LOVED. So did the girl. The boy only liked the parts with plenty of cheese. Cuz that totally looks like there isn’t enough cheese on it. *eyeroll* The sandwich was tasty, too, although I think I might have been the only one to think so. 

 I know. It should be pizza. But with my pizza chef out of town, and it not really in the budget or schedule to order pizza, it’s this chicken sausage, steamed broccoli and a little cheddar cheese, and mashed veggies. Mostly turnips and potatoes, with some garlic and kohlrabi thrown in for good measure. A very tasty dish!

Wednesday, pizza night

  
It looks gross, but it was actually tasty, even with plain yogurt instead of vanilla. This is one of my special kale-blueberry smoothie packs from the freezer. The boy complained about having a smoothie on a cold morning. I just wanted to keep my calories and carbs low, since it’s pizza night. 

  Doesn’t this look pretty?!? This was lunch as I was stirfrying it this morning, just before I added the sauce, which added a tinge of brown to everything. Even my daughter commented on how colorful it was. Mini peppers, snap peas, carrots, celery, mature bok choy, red cabbage, and baby leek. That and some chicken and some rice makes for a very yummy lunch! 

 See? Brown. But tasty.   Pesto chicken pizza with red onions. So. Good. 🙂
